{"id":536,"date":"2023-01-21T11:00:36","date_gmt":"2023-01-21T11:00:36","guid":{"rendered":"http:\/\/www.thedehons.biz\/wordpress\/?p=536"},"modified":"2023-01-21T11:17:43","modified_gmt":"2023-01-21T11:17:43","slug":"duck-terrine-must-do-one","status":"publish","type":"post","link":"http:\/\/ozone.me.uk\/?p=536","title":{"rendered":"Duck Terrine, must do one&#8230;"},"content":{"rendered":"<p><strong>UPDATE : <\/strong>This is similar but different to the other Duck Meat Loaf I do.<br \/>\nThis one is more &#8220;classic&#8221; as it is with porc.<br \/>\nThe other one can be found <a href=\"http:\/\/ozone.me.uk\/?p=2412\">here!<\/a><\/p>\n<p>I decided to make a few classics for the weekend as my brother&#8217;s family is coming for lunch on Sunday&#8230;digging out a few old recipes&#8230;<\/p>\n<p>I will make a chicken liver pate, some roasted belly porc, a duck terrine, some bread, pickled shallots and most likely we will try the &#8220;Coppa&#8221; which has been drying in the garage for almost 2 months now&#8230;<\/p>\n<p>As an adjustment to the recipe below, today in 2023, I would use a thermometer to adjust the cooking time to reach a &#8220;pink&#8221; but cooked colour for the final product.<\/p>\n<p>&nbsp;<\/p>\n<p>The below was first published on 15th July 2021.<\/p>\n<pre>Oli's Duck Terrine :\r\n\r\n2 Duck Magrets\r\n250g of minced pork\r\n125g of pancetta or bacon cubes\r\n1 egg (yellow and white)\r\n\r\nparsley bunch\r\nthyme\r\nsalt (very little if you use more bacon)\r\nmixed black and pink pepper (for the flavour)\r\nnutmeg (grated)\r\ncayenne pepper (for the bite)\r\n\r\nOli's secret incredients (!)\r\n2 \"screw tops\" of Red Martini (sweet taste)\r\n2 or 3 \"TUC\" biscuits crushed into powder (salty breadcrumb substitute)\r\n\r\nPreparation:\r\nSkin the 2 magrets (pull hard) and keep skins\r\nmince the magrets with \"small\" setting on kenwood mincer\r\nstir everything including the egg in the kenwood (with the Hook paddle)\r\nyou should get a fairly moist loaf.\r\n\r\nBaking:\r\nline a terrine with the magret skins (on the sides only)\r\nfill the meat loaf in the terrine\r\nput a twig of thyme or two on top\r\ntiny bit of salt and pepper on top\r\n\r\nbake in oven for 1 hour on 160C. this will sort of slow cook it.\r\nbake further for 20\/30 minutes a 200c. this will brown the top.\r\nThis second phase of \r\nbaking is where you decide how \"pink\"\/dry the terrine will be at the end.\r\n\r\ntake out of oven once cooked.\r\nlet cool down\r\nput in fridge overnight\/until next day.\r\n\r\nServe with toasted bread and pickled shallots\/gerkins\r\nGoes nice with Rhone Valley rustic wine...\r\n\r\nEnjoy.\r\n\r\n<\/pre>\n","protected":false},"excerpt":{"rendered":"<p>UPDATE : This is similar but different to the other Duck Meat Loaf I do.
