I use only 44% sugar and juice of 2 limes to enhance the flavour. I filter the skins to make a jelly-like jam which<\/p>\n<p>I enjoy most with freshly baked bread or American pancakes&#8230;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients :<\/strong><\/p>\n<ul>\n<li>500g of Blueberries<\/li>\n<li>400g of Jam sugar (but plain sugar works as well)<\/li>\n<li>2 Limes<\/li>\n<\/ul>\n<p><strong>How to make:<\/strong><\/p>\n<ul>\n<li>Simply heat all the ingredients until they come to a strong boil.<\/li>\n<li>Monitor the temperature until it reaches 110 degrees Celsius. (this is the temperature required to get a Jam, do not go too much above this, or you will get candy sauce&#8230;)<\/li>\n<li>Crush the skins of the blueberries to extract as much of the taste as possible. I use a potato muncher.<\/li>\n<li>Filter the jam through a &#8220;fine chinois&#8221; and then transfer it into Jam jars.<\/li>\n<li>Let it cool and put it into the fridge until the next day.<\/li>\n<li>It will keep for months if you seal it properly.
