This is work in progress.<\/p>\n<p>See my other recipes as well.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>450g of Strong Flour (13g to 14g of Proteins per 100g of flour)<\/li>\n<li>10g kosher salt<\/li>\n<li>50g white sugar<\/li>\n<li>7g bread yeast (I use the <a href=\"https:\/\/www.amazon.co.uk\/Lesaffre-Saf-Levure-Active-Dried-2x125g\/dp\/B0BQN681Q2\/ref=asc_df_B0BQN681Q2\/?tag=googshopuk-21&amp;linkCode=df0&amp;hvadid=641618523315&amp;hvpos=&amp;hvnetw=g&amp;hvrand=15601753664383651211&amp;hvpone=&amp;hvptwo=&amp;hvqmt=&amp;hvdev=c&amp;hvdvcmdl=&amp;hvlocint=&amp;hvlocphy=9045941&amp;hvtargid=pla-1995261518284&amp;psc=1\">DCL Saf Yeast<\/a>)<\/li>\n<li>100ml of warm milk<\/li>\n<li>4 eggs (for the dough) + 1 egg for the wash<\/li>\n<li>190g of salted, cubed, softened butter<\/li>\n<\/ul>\n<p><strong>How to make:<\/strong><\/p>\n<ul>\n<li>Warm the milk and dissolve the yeast into it with a bit of sugar<\/li>\n<li>Place flour, salt and sugar in a mixer with a dough hook<\/li>\n<li>Add milk, yeast, and eggs and mix for 10 minutes.<\/li>\n<li>After the 10 minutes have passed, cut the butter into cubes<\/li>\n<li>Add butter to the dough over 8 minutes (a few cubes at a time).<\/li>\n<li>Let bread rise for 90 minutes<\/li>\n<li>Put into the fridge for 60 minutes<\/li>\n<li>Bring out of the fridge and separate into six portions<\/li>\n<li>Make small balls with each portion by rolling the dough on itself (similar to making other breadsticks)<\/li>\n<li>Place onto a silicone sheet and cover with a towel for 30-40 minutes. They will rise again.<\/li>\n<li>Use an egg wash to cover the buns.<\/li>\n<li>Place into a pre-heated fan oven at 160 degrees. For approximately 15-20 minutes or until nicely golden.<\/li>\n<\/ul>\n<p>Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I am trying a different recipe for these small brioche buns.
